SALSA is offering two targeted training courses this July, designed to support producers at different stages of their HACCP journey. Both are accredited by The Institute of Food Science and Technology and delivered in small, interactive groups.
Understanding HACCP, Level Two - 4th July 2025

This hands-on introduction to HACCP is ideal for small producers setting up their first food safety plan. By the end of the course, participants will be able to:
• Describe the principles of HACCP and the Codex decision tree
• Understand the role of prerequisite programmes
• Conduct a hazard analysis and risk assessment
• Identify and manage Critical Control Points (CCPs)
• Implement and maintain HACCP plans
HACCP Management & Review – 8th July 2025
💡 Ideal if you're preparing for an audit, updating a plan, or need to strengthen your HACCP management system.
This course is designed for businesses that already have a HACCP plan in place and want to ensure it remains effective, compliant, and audit ready. By the end of the course, participants will be able to:
• Describe the legal and audit scheme requirements for HACCP reviews
• Establish and verify critical limits and monitoring activities
• Understand and apply validation and verification techniques
• Develop a HACCP audit checklist
