- Understand the role of pre?requisite programmes in food safety management systems.

- Identify food safety hazards and carry out a hazard analysis risk assessment.

- Identify and manage Critical Control Points, critical limits, monitoring activities and corrective actions.

- Understand the steps to implement and maintain HACCP plans
