SALSA Launches Issue 6
The SALSA Standards have been revised for the fifth time since their original launch in March 2007. Issue 6 (Food & Drink Production & SALSA plus Cheese) and Issue 4 (SALSA plus Beer) were launched on the 1st June 2022 and contain a number of changes, please take the time to read through this article carefully as the changes introduced into the new Standards will be relevant to your business.
At the core of the changes is Safe Food First and the balance needed to keep pace with industry best practice, whilst remaining true to SALSA’s core values.
The new Standards are auditable from 1st September therefore it is important that you make time to understand and implement the changes before your audit.

- Guidance Notes fully updated and now known as Interpretation Guide. Please login to download and read this document.
- Summary of Changes This tool will give you an overview of what has changed, what has moved and what is new within the Standard. Keep reading for a short summary of these changes.
- The updated and expanded SALSA Glossary is an important reference tool for making sure your fully understand the requirements of the SALSA Standard and a useful ‘jargon buster’ for industry terminology. Please download and read this document.
Key Changes
- Allergen Management NOW an enhanced and dedicated section.
- Raw Materials Risk Assessment (Food Fraud) NOW clarified with enhanced guidance
- HACCP NOW:
- Has clearer alignment with CODEX
- Is expanded to include product description and intended use
- Has a requirement for understanding and justification of CCPs and Critical Limits
- ‘Supplier Approval NOW with enhanced guidance for risk assessment’
- Labelling NOW with enhanced guidance including website claims.
- Premises, Layout & Structure NOW includes food defence, cyber security added and site plan requirement.

** Do you Supply Through STS?**
Good news! The previous section for STS requirements has now been incorporated into the main Standard. It is likely that your SALSA audit will still require a desktop review, please discuss this in advance with Micron 2 (public procurement).
