The Island Smokery produce Mature Orkney Smoked Cheddar in two verieties. Dark smoked which is smoked for 12 hours and Light smoked which is smoked for 4 hours. As an Orcadian company quality and flavour are paramount. Both our products have won numerous awards and continue to impress whenever shown. We also run as best we can a waste free factory, where everything that comes in must be recycled. This has worked so well for us that after a weeks production there is only one bag of waste. We take great pride in our product and also the environmental standards we have set ourselves. We strive to be the best in our field.
